Roasted veggies are a delicious addition to organic salads, whole-grain (or better yet grain free) pizzas, pasta dishes and sauces.

Choose organic veggies-like tomatoes, bell peppers, jalapeño peppers, eggplant, and onions-and slice to 1/2 inch thick. Then roast in a single layer in a 400 F degree oven for 30 minutes.
